The Christmas spirit is alive and well here in New England. Festive store windows are strung with lights, greenery and delicious confections. It's a time for hats, scarves and mittens - and of course, baking.

To me, there's nothing more thoughtful than being handed a beautifully wrapped homemade treat on the holidays.

This chocolate almond torte is a perfect holiday present. It's quick and easy and simply scrumptious. The batter alone is addictive. I know we're not supposed to eat batter but sometimes it's so good I can't help myself.

I actually made this cake for my fellow classmates who came from all over the world to join me in taking a semester long course in negotiation. It was a wonderful group of people who helped create an exciting, unique, fun and invaluable learning experience. Can you think of a better way to thank people than with dessert?

Class ended last night. It was sad to say goodbye but it was good to learn new skills and to make friends from Vienna to Venezuela.

I'd say dessert is a fantastic way to let people know you appreciate them. And every time you make the recipe, you'll be reminded of why you made it in the first place. With the gift of dessert you'll never forget the absolute joy in the eyes of friends when you hand them something homemade and chocolate.

Bite of cake


Chocolate Almond Torte

200 g peeled almonds, chopped and toasted
200 g good quality dark chocolate, melted and cooled
200 g sugar
100 g butter
5 egg yolks
40 g potato starch
40 g cocoa powder
5 egg whites
1 pinch of cream of tartar
powdered sugar for dusting

Butter and coat a tart pan with cocoa powder.
Preheat oven to 320 degrees.

Cream butter until light. Add sugar and beat until fluffy (about 3 or 4 minutes). Scrape down bowl and add egg yolks one at a time, mixing after each addition. Stir in potato starch and cocoa powder. Mix in melted chocolate and almonds.

In separate bowl beat egg whites with cream of tartar until peaks forms. The peaks should be firm but flop over a bit at the top when the whisk is pulled away. Fold the mixed egg whites into the chocolate mixture.

Pour mixture into tart pan until 3/4 full. I used an 8" tart pan and 2 mini pie tins to hold the overflow. Of course, you can make them in any size of shape that you'd like, just be sure to keep your eye on them so they don't overcook.

Bake 30-40 minutes until puffed and mostly cooked through. Remove from oven while it's slightly underdone, otherwise it will be very dry. Once cool, sprinkle with powdered sugar. It's delicious served alone or with chocolate sauce.

This looks like quite a lofty, spongy cake, texture which I prize in desserts! I agree with you on homemade dessert gifts, once they are gone, you can savor the warm memories. :)

First of all, that torte looks heavenly... I would be thrilled to receive that as a gift! Second, in addition to baking your delicious creations, taking gorgeous photos, and sharing them with us, you're in law school? How do you do it?! I'm extremely impressed.
The only baking I'm doing this year is for a cookie swap this week... looking forward to tasting and bringing home all the different creations!

I agree. the best gifts are te homemade ones. the thought that goes into even a simple one is worth so much more than any expensive store bought one (unless it's a camera lens ;-)) ) .. Love love the chocolate torte. I would love to be gifted with a one like that :)))

What a lovely torte; I may just have to change my mind about what I will make for a special dessert on New Year's. I am definitely plunging into holiday baking, starting with truffles today. I have to hold myself back to keep from baking overload, but baking is such a wonderful way to express appreciation for friends at this time of year. This recipe fits the bill, thanks.

The best gifts are definitely gifts from the heart or the hand. After trying your amazing chocolate ganache icing, I have no doubt that this cake is everything you say it is. Just looking at is is a pleasure, El. My daughter took her Masters in OT at Tufts and lived across the street (almost) from the Harvard Campus. It is absolutely beautiful there in the fall. It would be such a pleasure to take a course there - and meet and connect with people from all over the world. Hopefully, they will share their favourite recipes in the future with you... if they are so inclined in the kitchen. Maybe you could work on your new found negotiating skills to encourage them!

I love tortes especially chocolate almond tortes. I made one long ago and It still makes my mouth water as I recall the taste.

Do you have a link for converting grams to ounces? Also, what makes a tart pan a tart pan? The pan you used looks like a pie pan with a rolled edge -- could one use a pie tin? I'd like very much to make this, but am stymied by the grams and pans -- help appreciated!

Townhouseturnaround- Thanks for your comments. A tart pan has fluted edges. As I indicate in the recipe I used both a tart pan and mini-pie tins. So you are correct- what you are seeing in the photo are the mini-pie tins. Any pan will do so long as it will hold the batter to 3/4 full. Just be sure to keep an eye on it so it doesn't overcook.

I'm pretty sure this website has conversions http://www.worldwidemetric.com/measurements.html but I have not tried it for baking.
