It's hot outside. I wanted to bake something for you but I just can't bring myself to turn on the oven. I don't know about you but we don't have central air conditioning and our little window models just aren't performing in this heat.
Just because there's a little heat wave doesn't mean we need to give up on homemade dessert, right? So long as it's cool and refreshing - it's wonderful.
At a farm I recently visited, I filled a brown paper bag with peaches. There's something about peaches that are so cool and summery. When I got them home I sliced them up and splashed them with a little white wine.
I found a nice big glass and filled it with a scoop of homemade vanilla bean ice cream, the wine soaked peaches and a pile of fresh whipped cream. Refreshing and delicious. Perfect for a heat wave.
Vanilla Bean Ice Cream
3 cups heavy cream
3/4 cup sugar
2 teaspoons vanilla extract
1 vanilla bean, contents scraped out and set aside
Gently heat the cream and sugar until the sugar dissolves. Remove from heat and add the vanilla and vanilla bean contents. Refrigerate until cold. Pour into an ice cream machine and churn according to manufacturers instructions. Freeze.
